Spiced Vanilla Crème Brulee with Wild Berry Foam and Milk Snow


Full Fat Crème - 800ml

Full Fat Milk - 200 ml

Castor Sugar - 150ml

Egg Yolks 10

Cinnamon Sticks - 3/4

Vanilla Pod - 1

Zest of orange - 1

In a heavy bottom pan add crème and milk along with cinnamon sticks and heat the mixture and keep it aside


In a separate bowl add egg yolks and sugar along with zest of orange and vanilla pod and mix it well


Take the warm creme and add little at a time in cooperate the entire crème in the yolk mixture till the sugar dissolves


Let it rest for a couple of hours so that the flavors set


Pre-heat the oven at 160 to 170 degrees Celsius 


Strain the mixture and pour it in individual ramekins


Place the ramekin on top of the try and pour hot water into the tray and place the tray in the preheated oven for 30-40 mins or bake till perfection

Once done, cool the cremebrule completely and add a spoon of superfine sugar and spread it well on top of the brule and blow torch till the sugar caramelizes
